But Do You Really Need a Thermometer?

What About Rolls?

The only exception to this rule would be small rolls and flatter breads—think naan or focaccia. Maggie says that you can typically go by sight and touch with these varieties. These types of bread are done when they are golden brown and when you press the top of them, they spring back (kind of like with cake).

It is a sad relic of bread-baking history that even in our technologically advanced times, many recipes for bread call for checking its doneness by turning the loaf over and thumping the bottom. “If the bread sounds hollow” they say, it is done.

Quick bread doneness temps: 200°F

Pumpkin bread, zucchini bread, muffins, even cornbread and Irish soda bread —these are what the baking world calls quick breads.

Cake and cupcake doneness temperatures: 200–209°F

How many recipes have you read that say to check the doneness of a cake with a toothpick? I’ve read lots. But a toothpick isn’t actually the best test. Cakes are ultimately only a step or two away from quick breads, and they (mostly) share a common set of doneness temps.

Custard temperatures: when is it done?

Custards are liquids (usually milk-based) that are thickened by cooking with eggs. Knowing when to pull them from heat can be tricky, as they are often still quite jiggly in their centers when they are done (they congeal more as they cool), and overcooking them leads to grainy textures and unsightly cracking on the surface.

Cheesecake doneness temperature

Because of its unique composition and size, cheesecake has its own doneness temperature, 150°F (66°C). Pulling your cheesecake form the oven at a mere 150°F (66°C) will prevent cracking and will help keep your cheesecake moist and tender, not gritty and dry. Best baking temperature for bread

The standard bread baking temperature is somewhere between 220C (430F) and 230C (450F). Whole wheat breads and loaves with seeds or other toppings become less appealing with too much colourisation. These should be baked at 220C (430F). Standard white bread and sourdough is best baked at 230C (450F).

What oven temperature to bake soft rolls

Soft bread rolls are baked at 250C (480F) for 10-12 minutes. The rolls should be placed on a shelf that’s close to the top element of the oven. If you can’t do this with your oven, finish off under the broiler for the last 2-3 minutes. The heat quickly caramelises the sugars on the top surface.

When baking crusty rolls, bake using a preheated baking stone at 220C for 20-24 minutes. Adding steam as you load the oven will make your rolls extra crispy when they come out.

Instead of baking muffins and quick bread at one steady temperature throughout, use two temperatures to produce tall, rounded muffins and quick breads with a lightly crisped top and a pillow-soft center.

Why It Works

The initial 425°F oven temperature promotes a fast rise for these baked goods. It encourages the batter to puff, extending upwards out of the liner (or pan), for a taller, more domed result.
