I grow sphagnum moss in my spotted pond here. Like Curtis, I've got it in a 50/50 mix of sand and peat, with holes in the planters letting water in through the bottom. It can take the occasional submersion in the wild, but is generally a few inches above the water line.

Moss doesn't do great in water to long, tried that in my betta tank, ended up just using wood to decrease the ph.
