Can you put glass jars in a pressure cooker?

You, can use glass bowls in a pressure cooker but only tempered glass bowls. Bowls should be marked as oven-safe, dishwasher, and microwave safe. Pyrex dishes, mason jars, cans, and metal bowls commonly get used in a pressure cooker. Use a rack to ensure bowls are set away from the sides of the cooker.

Step 1

Place one canning rack in the bottom of the pressure cooker and pour 2 to 3 inches of hot water over it.

Step 2

Place filled pint jars on the rack and rest the second canning rack on top of them.

Step 3

Place the second row of pint jars in the canner and securely fasten the lid.

Step 4

Depending on the type of canner you have, either open the petcock or remove the weight from the vent port. Set your stove's burner to high and heat the canner until steam flows from the vent port or the petcock.

Step 5

Vent steam for 10 minutes, then close the petcock or place the weight back on the vent. The canner will now pressurize in three to five minutes.

Step 6

Begin timing the processing when the petcock starts to rock or jiggle or the reading on the pressure gauge indicates that the desired pressure has been reached.

Step 7

When the processing is complete, turn off the heat, remove the canner from the heat and the burner and let it rest until the pressure gauge goes back to zero or no steam escapes when the weight is nudged.

In 2016, Ball canning issued new pressure canning guidance about the number of jars in a pressure canner.

Minimum jar load and smaller-sized jars

A reader asked us if it would be fine using smaller jars to make up the minimum jar load volume requirement. For instance, 8 half-pints instead of 4 pints or 2 quarts (8 quarter-litres instead of 4 half-litres or 2 litres).

Advice from other sources

The National Center for Home Food Preservation does not appear to have a view on minimum canner load, as of summer 2016.

Summary

To be clear, this recommendation applies to pressure canning, and not water-bath (or steam) canning. We don’t know to date of any such minimum recommendation for water-bath or steam canning.
