I am surprised some regulars have forgotten the Gas Safety Regulations when they accept that pipe can be enclosed in behind a stud wall which now becomes unventilated cavity. See PartD 19

Yes you can. It needs to be 1.25" from the face of the stud or it needs a steel nail plate. I'd put them on anyway. Certain fiitings need to be accessible, like shut offs (obvious) but certain couplers do as well. Run it in flex copper, it will be WAY easier to pull it through and there won't be any joints/fittings.
