While going through some boxes in storage, I came across a 1 pound box of non-dewaxed rouge shellac flake that I bought from a jeweler about 4-5 years ago. I thought I read that flake shellac is not good when it gets old, but I am pretty sure that only applies to once it is mixed with alcohol. Can anyone confirm?

The simple test would be to mix some of the flake up with d.n.a. and apply it on some scrap pieces of wood. If it dries and gets hard, it should be alright. You could use un-de-waxed shellac for an "all shellac" finish; my experience with the un-de-waxed stuff shows that it french polishes a lot easier than the de-waxed version.
