Best Recipes That Use Stevia Sugar Substitute

The best recipes for stevia sweeteners are going to be low-carb desserts. Here are some of my favorite recipes:

Never Use Stevia on Its Own

Most (if not all) stevia extracts contain somewhat of aftertaste. To minimize this aftertaste, never use stevia to on its own; instead, always use stevia in combination with another sweetener.

Experiment with Different Stevia Brands

Some people like different stevia brands more than others, so I recommend experimenting with different brands to see what you like. From what I’ve read, some have much more noticeable aftertastes than others.

Always Taste Test

Stevia works best in no-bake recipes that you can easily taste before completing, such as homemade chocolates, ice cream, gummy candies, salad dressing, and no-bake cookies. Add a little bit of stevia to replace some of the sweetener, taste, and then add more stevia if necessary.

How to Substitute SweetLeaf Clear Liquid Stevia for Honey

Since stevia sweetness varies between brands, I’m afraid I can’t provide a definite conversion chart for substituting stevia for other sweeteners. I can, however, tell you how to substitute my favorite brand of stevia extract, SweetLeaf clear liquid stevia. These conversions are all for honey since that’s the only sweetener we use in our house.

Where to Buy Stevia

I usually buy my stevia from Azure Standard or Amazon. Most health food stores carry it, too. You can also grow stevia and make your own extract—I’ll be giving that a try next year!

Step 1

Substitute 1 teaspoon of Stevia Liquid Concentrate for 1/4 cup of honey in the recipe.

Step 2

Substitute 1/3 teaspoon SteviaClear Liquid for every 1/4 cup of honey in your recipe. A little liquid stevia goes a long way, so experiment with this ratio until you find a sweetness level you're happy with.

Step 3

Subtract the volume of liquid stevia you added from the amount of honey called for in the recipe to determine the missing liquid volume. For example, if you subtract 2 tablespoons of added Stevia Liquid Concentrate from the 1/2 cup of honey, or 8 tablespoons, the recipe calls for, you're left with 6 tablespoons of missing moistening agent.

Step 4

Add an alternative moistening agent to your recipe to account for the missing honey. Water will add moisture without altering the flavor or nutrition profile of the cake. Add nutrition and moisture by adding milk or silken tofu, or make the finished product fluffier by substituting egg or egg white.

Commercial vs Homemade

Commercial liquid stevia is more shelf-stable and this homemade recipe can separate. It could get cloudy, however, if this happens all you need to do is reheat the stevia liquid in a pot, let it cool, and put it back into your container. I recommend that you store this in the refrigerator.

Easy and Sweet

I have included links to the glass bottles I use for this. They are amber and don’t let the light in. I have found that this is the best way it should be stored (the same way the bottle that you get from Amazon is darkened plastic). I prefer to use the glass bottle with a dropper for easy use.

Stevia is probably the healthiest option, followed by xylitol, erythritol, and yacon syrup. Natural sugars like maple syrup, molasses, and honey are less harmful than regular sugar and even have health benefits. Yet, they should still be used sparingly. As with most things in nutrition, moderation is key.

If you use a commercially-prepared product that measures one-for-one to the amount of sugar in a recipe, then you simply need to substitute one for the other and include the bulking agent.
