I had some friends over and cooked a steak tonight and it got me thinking. I hadn't really noticed it, but I have been cooking steaks at lower temps recently with great results. I have been cooking between 400F and 450F. I used to try for 550F to 600F or hotter with a super fast sear but didn't see a whole lot of benefit in the results.

I often do mine under 500 and agree it's a little easier to get to target temp. Convention tells me it's a short, high temp cook >500 but experience tells me exactly what you're saying. The only exception is when cooking a frozen steak, I use 550 for about 2 minutes per side then go to the second zone until I reach ~130.

I just did a 2 zone cook on the Akorn. The temp at grate level in the back was 350, the dome thermometer was registering 500. Grate temp was measured with a Digi-Q. The dome thermometer is pure decoration for most cooks. I mainly use it to see if it's cool enough to put the cover on. Of course I touch it first...

I'm usually somewhere around the 500* range but it really depends on the steak thickness, CI or direct grate, mood I'm in etc... I never reverse sear unless they get up to around 2" thick.

Ever since I started reading this site I have been a big fan of the reverse sear. I use it for just about every steak I cook. 250F until 120 internal and then sear it off at about 700F. I can get the Junior up to 700F very quickly and without any problem. I cannot get the classic up to that temp without a much longer wait.
