Valentine’s Day will be here before you know it! Do you get excited around this time? I’ve never been one for Valentine’s Day but I do love all the red & pink goodies and flowers that pop-up everywhere around this time of year. So much lovey-doviness in the air.

Notes

I HIGHLY suggest watching the video that comes with this recipe. It's much easy to understand once you see it in action. You can create roses with as many rows as you'd like! The more rows, the prettier the rose looks I think, however it does start to get fragile. I usually stick with two rows.

1. Trim the Strawberry

Trim the green, leafy hull off the top of the strawberry so the fruit sits flat.

2. Cut the First Row of Petals

Hold the blade of your knife perpendicular to your work surface, about ½” up from the bottom of the strawberry. Make a small cut into the berry moving toward the bottom, but don’t cut all the way through.

3. Cut the Second Row

Choose a spot just above the first row, in between two petals, to begin your second row. Make your cuts smaller in this row, being careful not to cut into the first row. Continue all the way around the strawberry.

4. Make a Third Row

If your strawberry is large enough, make a third row of very, very small cuts above the second row. Just like before, start the row between two petals. If you have a smaller strawberry and no room for a third row, move on to the next step.

5. Shape the Center

Finish the rose by cutting the tip of the strawberry in half, but again, not all the way through — this should be a tiny cut.

6. Prep for Decorating

Plan to prepare your strawberry roses right before you put them on your cake. If they’re going to be sitting out for any length of time, brush them with a thin coat of piping gel or thinned apricot jam to keep them nice and red.

7. Add the Strawberry Roses to Your Cake

Use a small amount of buttercream to adhere the roses to a frosted cake.

Step 2: Collecting the Leaves From the Rose

Go through the bunch of roses and pull off 12 nice looking leaves. You can then put the roses in water and either give them to your loved one along with the strawberry bouquet, or keep them for yourself!

Step 3: Wash the Rose Leaves

Put the rose leaves into a colander and give them a good rinse. Rub them with your fingers under water to remove any surface residue.*

Step 4: Making the Strawberry Rose Stems

Take one of the bamboo skewers and start wrapping the floral tape around the non-pointy end. Keep wrapping until you're about half way up the skewer.

Step 5: How to Carve Strawberry Roses

Using your paring knife, cut down about one inch from the base of the strawberry until you're almost through. Before you remove the knife, pull back that 'petal' so that it sticks out a bit.

Step 7: How to Arrange Strawberry Roses

You can either choose to wrap the roses up bouquet style in wax or butcher paper the way a flower store would, or arrange them in a vase filled with white sugar, rice, or small white rocks. (I used sugar.)

Why Make Strawberry Roses

Turning strawberries into petite roses is as simple as a few strategically made cuts on the outside of each berry, but the results are pretty enough to adorn a cake or turn into a bouquet.

The Best Strawberries for Making Roses

Medium to large strawberries are best for making strawberry roses — especially when learning the technique. Berries that are wide at the base and taper to a point are best for the individual roses. You want the berries to be on the firmer side, so opt for berries that are just ripe.

Instructions

Prepare the strawberries. Rinse and dry the strawberries, leaving the stems intact. Insert a wooden skewer into the first strawberry through the stem end.

Step 1

Pour rosé into a 13x9" pan and freeze until almost solid (it won't completely solidify due to the alcohol), at least 6 hours.

Step 2

Meanwhile, bring sugar and ½ cup water to a boil in a medium saucepan; cook, stirring constantly, until sugar dissolves, about 3 minutes. Add strawberries, remove from heat, and let sit 30 minutes to infuse syrup with strawberry flavor.

Step 3

Scrape rosé into a blender. Add lemon juice, 3½ ounces strawberry syrup, and 1 cup crushed ice and purée until smooth. Transfer blender jar to freezer and freeze until frosé is thickened (aim for milkshake consistency), 25–35 minutes.
