Identification of Overgrown Okra

Okra is an annual plant that grows rapidly during the season. The plant develops yellowish blooms that turn into long green seed pods, which look like they have a cap where the pod meets the stem. These pods grow very fast, with flowers turning into pods ready for picking within a couple of days.

Okra Seeds as Food

If the seed pods are a few days old but not yet dried out, slice them open and remove the seeds. These can still be eaten, though you must bake or boil them. Grinding theses mature seeds allows you to use like flour or meal in bread, and “Backwoods Home” magazine reports they can be used in a drink similar to coffee if roasted before being ground.

Saving Okra Seeds

If you like okra and are planning to plant more next year, save the seeds from those larger pods. When you find pods that are just too old or too big to really be edible, leave them alone and let them dry out. The pods should be brown and starting to open; at that point, remove them from the plant, slice them open and remove the seeds.

Cautions when Removing Overgrown Okra Pods

If you’re not planning to use large pods, remove the pods from the plant so that it does not continue to spend energy making the pods grow even bigger. Also, wear gloves when working with the plant to avoid possible temporary skin irritation from the small hairs that cover the plant.
