Yes I would fill the grain. I always build the base before the top. You dont want a top not mounted to a base laying around you shop.

I built the top for my dining table first, and finished it and brought in the house and it up on sawhorses where it was going to live. If you are coloring (dye/stain) make sure you have enough to do both, or if you are mixing...I would wait till they can be finished together to get a consistent look.

No experience with ash, but the grain looks very much like red oak. I agree 100% that you should fill. If the timbermate doesn't suit you, here's a cheap trick I tried recently, that turned out well.

A contrasting filler looks great on Ash! Use a sealer coat before you fill the grain with tinted filler. This keeps the filler from coloring the wood as well.
