I am a fabricator - and I do both natural stone and "quartz". Either is an excellent choice. Personally, I am partial to natural stone because side by side natural stone is more beautiful. Your best bet is to decide what look you want and then make sure you understand the material properties of the different material options.

Not Alaska White. BTW, it's not only beautiful, but it is durable. Some granites are more stain-prone than others. Alaska White is not stain-prone, and will just need sealing once a year. Sealing takes literally 5 minutes - if you can wipe your counter you can seal. Just a minimal amount of sealer bought at Home Depot, wipe on very lightly, done.
