We are huge fans of a good Kouign-Amann! We like this pastry so much that this is not the first recipe about it that we publish, and it definitely not be our last. For today's We Cook Books recipe, we share with you the world-famous Dominique Ansel DKA recipe.

Combine the strong flour, salt, water, 14 g (1 tablespoon) of the butter and the yeast in a stand mixer fitted with a dough hook. Mix on low speed for 2 minutes to combine. Increase the speed to medium-high and beat for 10 minutes. When finished, the dough will be smooth and slightly tacky and will have full gluten development.
