My Take On The Types Of Flour

Flour is a pretty apparent baking agent. When you first start baking, you will learn very quickly that you need at least a few different types of flours in your pantry.

All-Purpose Flour

All-purpose flour is one of the most common types of flour. This variety is made from a mixture of hard and soft wheat. That gives it a medium protein and starch content.

Bread Flour

This is made entirely from durum wheat. The more significant amount of gluten produced by this higher protein flour helps bread rise higher.

Cassava Flour

Cassava flour can be used in place of wheat flour in several recipes. It is made from the cassava root vegetable. This is a carbohydrate-rich crop that also includes vital vitamins and minerals and is devoid of gluten.

Cake Flour

Cake flour is very finely ground from soft wheat, which gives it an almost silky feel. This strain is low in protein. It is also bleached. (Flours that bleach naturally with age are labeled “unbleached.” But chemically treated flours are “bleached.”)

Pastry Flour

Pastry flour is made from common wheat; This makes it preferable to all-purpose flour. Because of its high protein level, it falls between all-purpose and cake flour.

Whole Wheat Flour

You make whole wheat flour by grinding whole kernels of red wheat. Wheat seed head has three parts: the germ, bran, and endosperm.

German flour grading system

In Germany, flour is graded by “type numbers” (“Mehltypen”) which indicate theash content of the flour.

Austrian flour types

In Austria, you will the flour type preceded with a letter, such as W480. The W stands for “Weizen” (wheat); R stands for “Roggen” (rye), and D stands for “Dinkel” (spelt). [5] Wer ist dieser Typ W 480 und was macht er in meinem Mehl? 5 June 2019. Accessed October 2020 at https://www. bohpro.

Language Notes

Roughage in German is “Ballaststoffe”. The Germans refer to ash content (which would be “Aschegehalt des Mehls”) as “Mineralstoffgehalt” (mineral content).

The most common types of flours and their different uses

From all-purpose flour, wholewheat, to high-gluten flour–you've probably already come across different types of flour before and wondered how exactly they differ from each other. In short, how strongly the grain has been processed— or milled determines the mineral content of the flour and how it's classified.

Wheat flour

Frequently used wheat flour is an excellent source of energy, but unlike other types of flour it contains less fibre, vitamins and minerals. It is divided into the following flour types:

Cranberry pistachio biscotti with jam

All-purpose flour: This useful flour is just slightly coarser than cake or pastry flour and therefore has slightly more protein weighing in at about 10-12%. Its advantage: It absorbs liquids such as milk or water much more slowly, so the dough remains more stable during the baking process.

Panzanella salad, dressed 3 ways

Bread flour: This flour has about 12-13% protein and ideal, as it's name suggests, for bread! However, its consistency is also coarser and is not suitable for all types of bakery products. However, it is suitable for dark wheat and light mixed breads as well as for savory pastries.

Sauerkraut, apple, and bacon quiche

Italian 00 flour: This super fine flour is 'the' Italian pizza flour and is also known as Manitoba flour. Thought it's very soft, it's protein content hovers between 8-12%, unsurprising when you consider those deliciously chewy pizza bases.

Homemade pizza dough

Wholewheat flour: In wholewheat flour, the entire grain, including the endosperm, wheat germ, and outer bran is ground, which is why its degree of grinding is a cool 100 %! This flour offers the highest possible proportion of valuable minerals and dietary fibres and is often used for rustic wholemeal breads.

Rye flour

If one regards its content of mineral and ballast materials, rye flour is the winner. The popular flour type scores with a high portion of secondary plant materials, to which the grain owes its color and the tart flavor.
