Stereotypes of mice would make cheese the best option. However, in reality it isn’t the best choice. Cheese can have the tendency of drying out when left in mouse traps. If the cheese gets hard and stale, mice may not eat it.

Peanut butter or cheese could be effective as bait for mice. Finding out what they are currently feeding on is usually a better option.
Food Bait

There are some specialty rodent attractant gels in the market which claims to be the best bait ever. But in my testing and from reading around other people’s experience with these gels, they do not work any better than food.
A Sugar-Coated Season
That’s not to say they’ll refuse cheese if it’s available -- mice are neither so rude nor so picky. Mice will eat just about anything with at least some degree of nutritional value, which includes cheese.
