Skates are primarily found from the intertidal down to depths greater than 3,000 m (9,843 ft). They are most commonly found along outer continental shelves and upper slopes. They are typically more diverse at higher latitudes and in deep-water.

Behavior and ecology

Skates mate at the same nursery ground each year. In order to fertilize the egg, males use claspers, a structure attached to the pelvic fins. The claspers allow them to direct the flow of semen into the female's cloaca. Skates are oviparous, meaning they lay eggs with very little development in the mother.

Skates versus stingrays

Skates are like stingrays in that they have five pairs of gill slits that are located ventrally, which means on the underside of their body (unlike sharks that have their gills located on their sides). How to make roasted skate wing

Start with preheating the oven to 350 degrees. We will not be cooking skate on a high temperature. Lower is better. If your skate is frozen, thaw it first. You can easily do it by leaving fish in the fridge overnight. Optionally you can just leave it on the counter for a few hours and it will get defrosted. Fridge met hod is preferred.

The fish comes fresh with ice packs around it and is already skinned. The wing is pretty big, about 1 pound. So please look closely at the weight of your fillet and adjust the cooking time.

Side dishes for baked skate wing

Oh i love to eat skate with roasted potatoes. This is probably the best way to enjoy this fish is my opinion. Any other roasted or grilled vegetables will be great too. The delicate flavor of freshly cooked skate wing can be only accompanied with something mild, not too overpowering.

What to do with leftovers

You can store baked skate leftovers in the fridge for up to 3 days in a air tight container. Fish doesn’t stay fresh in the fridge for long so try to eat the leftovers quick. I do not recommend freezing cooked fillets because it may become rubbery and tough after reheating.

Expert tips

If not sure that the fish is cooked all the way through, use an instant meat thermometer. Fully cooked white fish should be at least 145 degrees Fahrenheit.
