We haven't been on all cruise lines but of the ones we have been on HAL, Princess, Costa, RCCL and Celebrity the beds on our recent cruise on HAL's Maasdam which had the new "European" style mattresses was the most comfortable bed that we have had so far on a cruise ship.

We've been on Norwegian, Carnival and Royal Carribean. I would have to say the beds on Norwegian win hands down. RCCL comes in a close second and Carnival's bed was like sleeping on concrete.

A tip from one who has an affinity for soft beds: as soon as you get to the cabin, ask the steward for extra padding for the mattress. On a couple of lines, I've gotten a second mattress placed on top of the original, which worked nicely. On my recent Celebrity cruise, I got two extra pads, which also filled the bill.
