Edible polymers refer to the polymeric materials which can be consumed by human beings, animals or microorganisms without any noxious effects towards health.
2. Classifications of edible polymers
Polysaccharides, lipids and proteins are three main sources of edible polymers ( Table 1 ).
3. Different forms of edible polymers
Edible polymers have been studied and applied as particle form, layer form (coating or film) or as textile structures (as edible fibers or for modification of non-edible textile). This category is given in Fig. 1.
4. Application of edible polymers
Various products derived from edible polymers have received a multitude of applications in food industries, biomedical, cosmetics, energy, and water treatments ( Fig. 7 ).
5. Commercial aspects of edible polymer based products
Growing demands of consumers to high quality and ready to eat food products, packaging materials, biomedical materials and cosmetics as well as reduction of environmental contaminations lead to the production of commercial products based on edible polymers.
6. Safety and future perspectives
With the growing use of ready to eat products, pre-cut fruits and vegetables and minimally processed foods, there is concern on its safety and toxicity issues. Additionally, safety relates to public health and security against bioterrorism. Any foodborne diseases and food quality changes should be avoided from the food chain.

Key findings and conclusions
Exploring new sources of edible polymers, incorporation of active components, with combination of different edible materials and simultaneous utilization of nanotechnology/nanodevices are fundamental towards the design of environmental friendly materials in food, biomedical, and energy.

Yo, Rolf. I remember this as a legitimate question a couple of times back when I was in Regulatory Affairs. My stock answer was that while the polymer may have FDA approval for food contact, we did not recommend eating them. Cases I remember where an extruder plastic part was coming apart and not discovered until after a lot of candy was made and feeding of scrap candy bars which may contain traces of wrappers to farm animals. Hi Frank, sounds fair! However, could this kind of issue of plastic parts coming apart, not also occur in regular food processing machines, thus making vegetables, meat, baby food, you name it, contaminated and therefor unedible? Rolf

I believe it was an extruder gear made out of Delrin. Delrin was not one of my polymers but I was answering the question for absent Delrin consultant. When candy maker opened machine for cleaning, gears were falling apart and he wanted to know if candy was safe to sell.
