This could be stemming from the people who make kombucha regularly have developed a flavor profile they consider to be the kombucha flavor and anything which departs from that just isn’t kombucha.

There are several criteria which can be used to determine what is “best”. These are only three of many criteria which have appeared regularly in searches. Not included are the health effects of various tea types for making kombucha.

Tea to avoid when making kombucha

Most Herbal Teas: Most herbal teas are not suitable for brewing kombucha, as they don’t have the nutrients needed for your fermentation to thrive.

You can use loose leaf tea to make kombucha! For every 4 bags of tea used in the kombucha recipe, substitute 1 Tbsp of loose leaf tea.

What is tea?

The Latin name for the tea plant is Camellia sinensis. All types of tea – white, black, green, oolong, and post-fermented teas (such as pu-erh) etc. are derived from the same plant. The different types are primarily determined by how they are processed.

Why tea?

Tea contains several nutrients and compounds that feed the Kombucha culture including nitrogen, caffeine and theanine to name a few. Along with the sugar, tea is the main fuel source for the SCOBY.

White Tea

White tea is harvested from the youngest, most delicate buds & leaves which are covered in fine white hairs and located at the top of the tea plant. Once picked, they are allowed to lightly wither in the sun and then are gently dried to prevent further enzymatic oxidation (meaning to turn darker from exposure to the air, kind of like an apple).

Green Tea

Green tea is unfermented and delicately processed using sunlight, heating & rolling, which releases its essence. It is rich in catechin polyphenols, particularly epigallocatechin gallate (EGCG). Here are some of the healing properties attributed to EGCG:

Taking all of these factors into account, Hannah developed her own ideal mix of black tea, white tea, and green tea (plus a few dashes of selected brew-safe tisanes) for an ideal Kombucha brew and flavor. Not only that, it is absolutely delicious on its own.

Teas to Avoid

Teas with flavorings teas such as Red Zinger or Chai: these often contain essential oils that may damage the culture. There are varying opinions about Earl Gray as it contains oil of bergamot but several people have brewed Kombucha with it successfully. You may not want to use it as your main tea but it adds nice flavor and body.

Boil and steep the black tea: Bring the water to a boil. After it has come to a boil, remove it from heat and stir in the sugar to dissolve. Put in the tea and allow it to steep until the water has cooled. Depending on the size of your pot, this will take a few hours.

Once again, we recommend using black tea for brewing your kombucha . Black tea is highest in caffeine and tannins, both of which feed your SCOBYs ! However, you can still brew just fine with other options. Other options are more acceptable when you are less concerned with growing big and healthy baby SCOBYs.

Can I use any sugar for kombucha?

Organic cane sugar is our top recommendation for the sugar you use in your kombucha . It offers the SCOBY exactly what it needs in its purest form, and will usually result in the most effective and efficient fermentation as a result.
