You have to do everything beforehand to prevent possible curdling. And if the mac and cheese do curdle, immediately remove it from the heat.

Why add water to a sauce etc just to reduce it?

I've seen this a bunch of recipes I use and don't really understand why I'm doing it - what's the point of adding water if I'm just going to cook it off? Usually these recipes are going for a 'thick' sauce as well, in which case it seems even more redundant. I'm assuming that there's some reason for it that I'm missing.
